Dr. Susan Percival, Ph.D. is the Chairperson of the Food Science and Human Nutrition Department at the University of Florida. Her FPRF research focuses on enhancing immunity by dietary components, with an emphasis on a specific immune cell- the γδ-T cell. Using both human subjects and cell culture models, she and her research team have learned about the mechanisms by which immunity is modified by diet. Susan’s goal is to improve immune function while reducing damaging effects associated with chronic inflammation, working with Drs. Notterpek and Dahl to create and test Notterpek’s myelin related research findings on humans.
